"‘Sobei Wase’ is a native variety of rice from the Shonai region in Yamagata Prefecture, Japan, and it is considered a rare sake rice. This rice variety is the parent of the legendary ‘Kame no O’ sake rice, making it even rarer than ‘Kame no O’ itself . Tsuno Kawa Shuzo obtained the seedlings of ‘Sobei Wase’ and collaborated with contract farmers to cultivate it, reviving it for the modern era after more than three years of effort .
‘Sobei Wase’ is characterized by an elegant aroma and a moderate volume, resulting in a rich and flavorful sake. Its supple acidity ensures a clean finish, allowing you to savor its complex flavors with each sip. Not only does it have a mild aroma that doesn’t overpower dishes, but it also pairs well with a range of flavors, from bold seasonings to simple ones. It particularly complements dishes with dashi (broth) or acidic flavors .
The ‘Shield Sobei Wase’ is a junmai daiginjo sake made exclusively from ‘Sobei Wase’ rice. It has a polishing ratio of 50% and an alcohol content of 15%.
