The common denominator of this "oyster sake" is "Ibo River".
The spring water of the Ibo River is used as the brewing water for Shinriki that is grown locally.
It was brewed to pair with Harimanada oysters grown with the blessings of the river flowing from that Ibo River.
The strong flavor of rice that is typical of Tatsuriki sake, which has the sweetness that spreads softly mellows out the flavor of the oyster. The acidity unique to the sake rice, Jinriki, refreshes the aftertaste. It is a perfect accompaniment for oysters. Of course, it can be paired with all oysters, not just those from Harimanada!
